Recipe: Brown Rice Pilaff
Ingredients:
2 cups Food Loin Whole Grain Brown Rice
1 Tbl Canola Oil
1 small Onion, chopped fine
1 Qt Food Loin Lo-Fat Chicken Stock
4 oz Dried Fruit such as Cranberries, Raisins, small diced Pineapple or other Tropical Fruits
Method:
In a 2 or 3 Quart pot with a tight fitting lid, over med-high heat add the oil and onions, saute until the onions become soft, add the rice and saute for an additional 2 mins. Add the fruit and stock, bring to a boil. When the rice starts to boil reduce the heat source to its lowest point, cover the pot and set a timer for 40 mins. Before serving the rice you should stir the contents to mix the ingredients to form a pilaff, or you may transfer the rice to a serving dish. Rice can be cooked and held up to 3 hours without removing the lid.
Options:
Remember that the liquid you use must be twice the amount of rice, this recipe works for most rice, such as Jasmine, Converted, Basmati, but not for others such as Cracked, Japanese Sushi or Risotto, please read the labels before cooking.
Liquids used can be wine, tomato juice, coconut water, water, rose water and so on, let your imagination run wild, and remember to have fun.
