Recipe: Mediterranean Shrimp with Jeweled Cous Cous
1 c. cous cous
1 1/4c. vegetable stock
2 T. olive oil
1/4 c. parsley
1/4 c. toasted pine nuts
1/4 c. raisins
2 t. cumin
TT Salt and Pepper
1. In a small pan heat the stock, oil, and cumin, bring to a boil then add
cous cous.
2. Remove the pan from the heat, and cover.Chop the parsley.
3.Combine the steamed cous cous, parsley, pinenuts, and raisins; fluff with
a fork and season to taste.
