Recipe: Planked Salmon

Choose an oak or cedar plank only to fit your oven. You can use a baking
sheet if you don't have a plank.

Ingredients:

Olive oil for brushing

1/4 cup Texas Pete Honey Mustard

1/4 teaspoon celery salt

1/4 cup Texas Pete Hot Sauce

4 - 8 oz. boned and skinned salmon filets

Preparation Procedures

Cooking: If the plank is new, season it before cooking the fish. Heat oven
to 250 F. Lightly brush one side of the wood plank with olive oil. Put the
plank, oiled side up in the preheated oven until plank begins to brown
slightly: 30 to 40 minutes.

For the planked salmon, mix Texas Pete Honey Mustard, celery salt and Texas
Pete Hot Sauce. Brush olive oil on the salmon. Season the fish with some of
the mixture.

Remove plank from the oven and turn temperature to 350 F. Put the salmon
onto the plank, Brush the top of the salmon with olive oil and season with
the Texas Pete mixture.

Roast salmon on the plank in a preheated oven for approximately 15 minutes,
do not turn the salmon over.

This recipe works great on the grill too! Just place the plank on the grill
on medium heat, place seasoned salmon on the plank and cook with the hood
down for 15 minutes, do not turn the salmon over. Cooking time may vary as
to the size of salmon filet and doneness preference.

Note: wash planks after each use with soap and hot water, and store in a dry
environment until next use. Replace planks when they become excessively
charred. When grilling you will note charring on the bottom of the planks,
this is OK as this process adds the smoke seasoning you desire.

Serving: Carry the planked salmon to the table. Carefully remove portions of
salmon and serve while hot.
