Recipe: Roasted Tomato and Basil Bisque
2 large tomatoes
1/2 c. vegetable stock
2 T cream
2 T fresh basil
TT Salt and pepper
TT Parmesan cheese
1.Cut tomatoes in half, remove the core and most of the seeds, season with
salt and pepper, roast in oven until tender and a little caramelize
2. Heat vegetable stock, blend with tomatoes, cream, and basil. season to
taste and top with Parmesan cheese.
