STIR FRY CHICKEN AND VEGETABLES, QUICK AND EASY
INGREDIENTS:
1 LB BONELESS SKINLESS CHICKEN, CUT INTO 1/2" CUBES
1 MED ONION, PEELED, HALVED AND CUT INTO THIN STRIPS
2 STRIPS CELERY, PEELED AND CUT ON AN ANGLE INTO THIN STRIPS
2 EACH MED BELL PEPPERS, OF TWO DIFFERENT COLORS, CORED AND CUT ON AN ANGLE INTO THIN STRIPS
1 INCH LONG PIECE OF PEELED GINGER, MINCED
1 MED ZUCHINNI, CUT IN HALF LENGTHWISE, THEN CUT ON AN ANGLE INTO THIN STRIPS
1 MED YELLOW CRROK NECK SQUASH, CUT IN HALF LENGTHWISE, THEN CUT ON AN ANGLE INTO THIN STRIPS
1 TBL ITALIAN HERBS
1 TBL GARLIC POWDER
4 OZ CARROTS SHREADED
6 EACH MED MUSHROOMS, QUARTERED
1/2 BOTTLE FOOD LOIN TERIYAKI MARINADE
2 TBLS CANOLA OIL
METHOD:
PREHEAT A WOK, OR CAST IRON PAN OR LARGE FRYING PAN ON HIGH HEAT. CAREFULLY ADD OIL, THEN ADD ONIONS, AND CELERY, STIR FRY UNTIL THEY BECOME SOFT AND SIGNS OF CARAMEL ARE EVIDENT. ADD THE PEPPERS AND GINGER, STIR FRY FOR 3 MINUTES. ADD THE ZUCHINNI AND SQUASH, STIR FRY FOR AN ADDITIONAL 2 MINUTES, ADD MUSHROOMS AND STIR FRY FOR 1 MINUTE. REMOVE THE VEGETABLES FROM THE WOK BY PLACING INTO A LARGE BOWL. REPLACE WOK TO THE HIGH HEAT SOURCE AND ADD THE CHICKEN, SEASON THE CHICKEN WITH HERBS AND GARLIC POWDER, STIR FRY UNTIL ALL THE MEAT IS FIRM AND NO PINK IS EVIDENT. ADD THE FOOD LOIN TERIYAKI MARINADE AND CARROTS, STIR FRY FOR 2 MINUTES, THEN ADD THE VEGETABLES BACK TO THE WOK. THE STIRFRY DISH IS NOW READY TO SERVE, ADD COOKED FOOD LOIN BROWN RICE OR COOKED WHOLE GRAIN FOOD LOIN PASTA TO COMPLETE THE MEAL.
NOTE: THIS RECIPE WORKS WELL WITH SHRIMP, VEAL CUBES, WILD MUSHROOMS, FRESH TURKEY BREAST CUBES, LEAN PORK CUBES, OR SIRLOIN BEEF CUBES. FOOD LOIN HAS A VARIETY OF MARINADES, TRY DIFFERENT ONES, SUCH AS SOUTHWEST, OR GARLIC AND LEMON.
